ABOUT Dry Methi Subji RECIPE

Methi subji or methichi bhaji is a favorite and common side dish in Maharashtra, Gujrat.To increase crunchiness roasted crushed peanuts can be added. I have used fresh grated coconut to reduce the bitterness. This is our traditional recipe and has been passed down to me from my granny. This is very nutritious and healthy vegetable has lots of medicinal properties. It reduces risk of heart disease, controls blood sugar, helps in digestion, to control weight, fever etc

Ingredients Serving: 4

  1. Methi/fenugreek leaves – 2cups
  2. 1.5 Onions chopped finely
  3. 3-4 Garlic cloves crushed
  4. 2-3 Green chili slit
  5. Oil – 2 tbsp
  6. Salt - as per taste
  7. Fresh Grated coconut – 2 tbsp or Crushed roasted peanuts – 2tbsp

Instructions

  1. Wash methi leaves thrice under running water. drain off the extra water.
  2. In a nonstick pan or wok heat oil. Add finely chopped onion, salt. Cook till translucent
  3. Add crushed garlic, green chili. Cook till raw aroma goes away.
  4. Add Methi leaves. Stir well and cook for 5-6 minutes. Do not close the lid otherwise they will turn black or lose their green color.
  5. Add fresh grated coconut/peanuts . Mix well.
  6. Serve hot with chapati or dal rice.
