Me and my daughter love this yummy yet healthy pan fried chicken with sauteed veggies with rice as it is very quick and easy to make..This meal is packed with healthy vegetables , flavourful and it tastes wonderful..

INGREDIENTS FOR MAKING CHICKEN
Chicken leg pieces - 2
Curd - 3 tbsp
Ginger paste- 1 tsp
Garlic paste- 1 tsp
chili powder - 1/2 tsp
Black pepper- 1 tsp
Salt as required
INGREDIENTS FOR SAUTEED VEGGIES AND RICE
Cooked rice - 1 cup
Chopped garlic - 1 tsp
Potato- 1 , cut length wise
Green peas - 1/2 cup
Carrot - 1 , cut sliced
Capsicum- 1 , cut into slices
Mushroom - 1/2 cup , cut into halves
Sweet corn - 5 tbsp
Soya sauce - 1 tsp
Salt to taste
Lemon juice - 1 tsp
Instructions
Marinate chicken with curd , ginger garlic paste , salt to taste, Black pepper, chili powder and garam masala for 4- 5 hrs.
Wash all veggies except mushroom, then boil it for 5 minutes...drain water .keep aside..
Then heat a pan with 1 tsp oil ..add marinated chicken. Fry both sides till light brown and cooked well on low- medium heat.. ( flip chicken time to time to prevent stick and burnt to bottom of the pan).
Now heat a pan with with 1 tsp butter . Add chopped garlic , stir it for a minute...Then Add mushrooms and saute for 2- 3 minutes.
Then add boiled veggies, salt to taste , black pepper and soya sauce ..stir it for a minute
Now add cooked rice and lemon juice .toss well to mix rice with veggies.. check seasoning...
Serve hot healthy yet tasty pan fried chicken with sauteed veggies with rice.
