Ingredients Serving: 4

  1. FOR UPSIDE CHERRY DOWN CAKE :
  2. 1/4 cup wheat flour
  3. 1/4 cup oat flour
  4. 1/4 cup Semolina
  5. 1/4 cup milk pwd
  6. 1/4 cup powder Sugar / jaggery
  7. 1 tsp Baking powder
  8. Pinch Of Baking Soda
  9. 1/4 cup Oil / butter
  10. 1/2 cup Milk
  11. 1/2 cup cherry washed and pitted
  12. 1/4 tsp Vanilla essence
  13. For Cherry topping:
  14. Fresh pitted cherries- 2¼ cups
  15. Juice of ½ lemon
  16. Unsalted butter- 1 tbsp
  17. powdered  sugar- 2 tbsp
  18. FOR OATS DOSA:-
  19. 1/2 cup oats flour
  20. 1/2 cup dosa batter
  21. Oil as required
  22. Salt to taste
  23. For sambhar
  24. Split pigeon peas soaked1/2 cup
  25. Turmeric powder 1/2 tsp
  26. Oil 2 tablespoons
  27. Tamarind Paste 1 tbsp
  28. Mustard seeds 1/2 teaspoon
  29. Whole dry red chillies broken 4
  30. Fenugreek seeds 1/2 tsp
  31. Asafoetida 1/4 teaspoon
  32. Green chillies slit 2
  33. Curry leaves 10-12
  34. Drumsticks 2½ inch pieces 2
  35. Jaggery 1 tsp
  36. 1 cup chopped vegetable
  37. Sambhar powder 1 1/2 tsp
  38. Salt to taste
  39. COCONUT LITCHI MOCKTAIL
  40. 200 ml of coconut milk
  41. 5-6 litchi deseeded
  42. 1-2 tbsp roasted oats
  43. 4-5 soaked almonds chopped
  44. Powder sugar if required

Instructions

  1. UPSIDE CHERRY DOWN CAKE:- Preheat oven to 180° degrees C. Prepare a 6” round cake pan by greasing with oil and place a piece of baking paper at the bottom of the pan.
  2. For Cherry topping Add everything mentioned for cherry topping in a nonstick frying pan. Mix lightly and cook on low heat for 7-8 minutes. Within this time the liquids coming out from the cherries would reach a thin syrupy consistency.
  3. When the cherry topping is done, transfer immediately to the prepared cake pan. Spread slowly in a layer with a spatula. Let it be cool at room temperature,
  4. For Cake In a bowl add everything mentioned for the cake better. Keep whisking until a lump free batter forms. The batter would be thick. Pour this batter slowly on the cherry topping. Smooth the top with the help of a spatula.
  5. Tap cake pan gently on kitchen counter 2-3 times to release the air bubbles. Bake for 20-25 minutes.
  6. Cool the cherry cake in the pan for 10 minutes and then run a sharp knife around the edges of the pan and carefully remove the cake. Peel the baking/parchment paper carefully from the top of it got stuck with the cherry topping. When cooled, slice, serve and enjoy!
  7. FOR OATS DOSA
  8. Add oats flour in dosa batter. Adjust the consistency by adding water. Let it rest for 15 minutes. Add water if needed. Prepare the dosa with the batter on non stick tava with less oil. Serve hot with Sambhar, coconut chutney and apricots chutney.
  9. FOR SAMBHAR:- Pressure-cook the dal in two cups of water with turmeric powder and one teaspoon oil for three whistles. Open lid once the pressure has reduced. Mash the cooked dal lightly with a wooden spoon.
  10. Heat the remaining oil in a thick-bottomed pan. Add mustard seeds. When they splutter add dry red chillies, fenugreek seeds and asafoetida.
  11. Stir and add green chillies, curry leaves and drumsticks, vegetables and cook for one minute on medium heat stirring briefly. Add sambhar powder, salt, and one cup water.
  12. Reduce heat and simmer for six to eight minutes or till drumsticks are cooked. Add tamarind pulp, boiled dal, jaggery and simmer for two to three minutes. Serve hot with dosa
  13. COCONUT LITCHI MOCKTAIL:-
  14. Add everything in a blender jar and grind till everything mix well.
  15. For garnish: Apply lemon juice on a glass rim Then flip the glass in a plate of powder sugar. Pour the chilled litchi coconut Mocktail in glass . Sprinkle some chopped almonds and oats on top of it.
