ABOUT Cheesy Egg Uttapam RECIPE

We all know Uttapam is a traditional dish from south India.This one is little different from traditional one.Here I have used egg and cheese with vegetable as uttapam toppings which makes it more delicious,yummy and rich.

Ingredients Serving: 2

  1. For uttapam batter,
  2. 3/4 cup rice(soaked)
  3. 1/4 cup urad dal(soaked)
  4. 1/3 cup beaten curd
  5. Salt to taste
  6. Oil for frying
  7. For Uttapam toppings,
  8. 2 Eggs
  9. 1 cup grated cheese
  10. 1/2 red bellpepper (sliced)
  11. 1/2 yellow bellpepper (sliced)
  12. 1/2 green capsicum (sliced)
  13. 1/2 onion(sliced)
  14. 1/2 tomato(sliced)
  15. 1 green chilli chopped (finely)
  16. 3/4 tablespoon Chilli flakes
  17. Salt to taste
  18. Black Pepper to taste
  19. For garnishing,tomato ketchup(Optional)

Instructions

  1. Take 6-7 hours soaked rice and dal.Drain it.
  2. Put it in grinder with beaten curd and grind into a smooth batter.
  3. Keep it in warm place for fermentation for overnight. This time can vary in different place for different temperature.
  4. Now mix salt to taste with fermented batter.
  5. Take a pan,grease with oil in medium heat.
  6. Pour 2.5 ladle of batter in the pan.Cover it for a minute.
  7. Now add half of vegetable topping. Sprinkle little salt and pepper. cover it for 1 minute.
  8. Break 1 egg on the uttapam and spread this with a fork or spoon.
  9. Sprinkle half of grated cheese over it.
  10. Season with little chilli flakes and pepper powder.Cover it for 3-4 minutes.
  11. While everything is cooked properly,take out uttapam from pan.
  12. Fry another uttapam with leftover batter and toppings in similar manner.
  13. Serve it with some gernishing with ketchup or coconut chutni or as it is.Cut into pieces as you want.
