ABOUT Restaurant Style Dosa Pizza RECIPE

I ate this dosa while I was staying in Hyderabad . He had numerous varieties at his shop . His dosa inspired this pizza dosa of mine . What i did here is that, i fused different varieties in one . Not neccessary that you need to follow every step of my recipe . Let your imagination run wild . He had initially started as a street hawker whose 'Pizza Dosa' amazed many . Slowly his business started to grow and now he has a restaurant that is located at a posh locality called Banjara Hills . His restaurant also functions as a late night eatery . This restaurant is in high demand . Even VIP members and tollywood actors do not mind waiting . They say it's 'worth the wait' . His restaurant has been ranked 4.2 out of 5 on Zomato . Though now his shop functions as one of the high level restaurant , it is still popularly known as 'Ram ki Bandi' .

Ingredients Serving: 5

  1. FOR THE DOSA :
  2. 2 cups rice
  3. 3/4th cup urad daal
  4. 1 tsp methi or fenugreek seeds .
  5. Salt to taste
  6. For the Chicken :
  7. 200 gm boneless chicken
  8. 1 onion ; chopped
  9. 2 tbsp Oil
  10. 1 tsp red chilli powder
  11. 1 pinch red colour
  12. 1 tsp Ginger garlic paste
  13. 1 tsp Lemon juice
  14. 1 tbsp soy sauce
  15. 1 tsp tikka masala
  16. 1 tsp tandoori masala
  17. FOR THE POTATO MASALA :
  18. 3 boiled and cubed potatoes
  19. 1/2 tsp Turmeric
  20. Salt to taste
  21. 2 green chillies ; finely chopped
  22. 1 onion ; chopped
  23. 1 tsp mustard seeds
  24. 1 tsp bengal gram (chana daal )
  25. a few curry leaves
  26. 2 tbsp Oil
  27. 2-3 dry red chillies
  28. FOR THE PIZZA DOSA :
  29. 1 egg
  30. 1/2 cup cabbage ; shredded
  31. 2 onion ; chopped
  32. 2 tomatoes ; chopped
  33. 1 bellpepper ; chopped
  34. 2 carrots ; shredded
  35. A handful of coriander ; chopped
  36. 1/2 cup pizza sauce
  37. White cheese slices ; as desired
  38. Mozzarella ; as desired

Instructions

  1. FOR THE DOSA BATTER :
  2. Soak the urad daal and rice separately in clean water .
  3. Grind the daal along with fenugreek seeds and rice to a nice thick paste separately and let it sit in a warm place for about 6-8 hours to ferment .
  4. Add salt to taste and mix that well . We are now ready to proceed .
  5. FOR THE CHICKEN :
  6. In a pan , heat the oil .
  7. To this , add in the chopped onion and ginger garlic paste . Let the onion brown for a minute or so .
  8. Add in the chicken next .
  9. Put in all the masalas and the lemon juice and soy sauce as well .
  10. Mix everything well enough and let it cook for another 7-8 minutes or till the chicken has cooked evenly .
  11. FOR THE POTATO :
  12. In another clean pan , add the oil . Let it heat up .
  13. Add in the mustard seeds , chana daal and turmeric powder. Let them cook for minute .
  14. Add the curry leaves followed by onions and dry red chillies . Let the onions get browned up .
  15. Finally , add the potatoes and stir well . Cook it for not more than 5 minutes .
  16. FOR THE PIZZA DOSA :
  17. Make your dosa as and when desired . After spreading the dosa batter on your pan , crack an egg onto it and cover it .
  18. Let it cook on medium to low flame .
  19. Once done,
  20. Spread the pizza sauce followed by the mozzarella .
  21. Add in the white cheese slices .
  22. Then spread the chicken and potato pieces evenly .
  23. Now mix all the cut veggies and spread that evenly on the dosa .
  24. Finally , sprinkle coriander generously .
  25. Serve it hot with chutneys of your choice.
