ABOUT KULCHA RECIPE

Amritsar is a small city, which is famous for Golden Temple & its food. Almost every side of the street have kulcha stole. Indian flatbread (Kulcha), served with chickpeas in a spicy gravy(Channa Masala). Talking about Amritsari Kulcha by name tells that the dish is of Amritsar.i’m just trying to make this in my style inspired from Amritsari Kulcha.

Ingredients Serving: 6

  1. *For Kulcha dough*
  2. Plane Flour- 250 gm
  3. Yogurt-150 gm
  4. Baking powder- 1 tsp
  5. Baking Soda- 1.5 tsp
  6. Salt- 1.5 tsp For Dough
  7. Powder sugar- 1 tbs
  8. Oil – 2 tbs
  9. Water- Half cup or (as needed)
  10. Sesame Seed- 2 tbs
  11. Coriander leaves- 2-3 tbs
  12. *For stuffing*
  13. Boiled Potato- 2 medium size
  14. Onion- 1 small size(roughly chopped)
  15. Green chili- 1 (roughly chopped)
  16. Garam masala- 1 tsp
  17. turmeric powder- 1 tsp
  18. Coriander powder- 1 tsp
  19. Cumin Powder- 1 tsp
  20. Red chili powder- 1 tsp
  21. Chat Masala- 1 tsp
  22. Dry mango powder(amchur) – 1 tsp
  23. Cottage Cheese – 50 gm
  24. Salt - as per taste
  25. Butter – 1 cube for each kulcha

Instructions

  1. For making kulcha firstly we need to make the dough.
  2. In a strainer add all the dry ingredients & strain them in a large mixing bowl
  3. Mix them lightly. Make a well in the center.
  4. Add yogurt & oil, mix them by hand.
  5. Now add water in little amount, and start to knead, make a soft & smooth dough.
  6. Cover it with wet kitchen towel. Rest it for at least 30 min.
  7. Meanwhile let’s prepare the stuffing.
  8. Take a mixing bowl add boiled potato (make sure all the moisture released from it), mash it.
  9. Now add all the Ingredients mention under *For Stuffing* category.
  10. Mix them well, keep it aside.
  11. Now take a large portion from dough, flatten it 5 inch
  12. Add sufficient stuffing and roll it again.
  13. Then flatten it, make small & semi thick kulcha.
  14. Sprinkle some sesame seed & fresh coriander leaves on the top of it,
  15. Brush some water on the other side.
  16. Now heat up a nonstick tawa place the kulcha wait for 2 min.
  17. Flip it over,
  18. Then after a min or so flip it again, and grease with butter.
  19. Place them on plate.
  20. Maintain the same process make other also.
