ABOUT Goan Paav (Dinner Rolls) RECIPE

I am a hardcore Goan and just cannot resist goan paav or dinner rolls whenever I prepare any non vegetarian food. These soft from inside and crunchy from outside dinner rolls are very simple to prepare , just that it only takes time for flour to rise. The rest of the process is quick.

Ingredients Serving: 12

  1. All Purpose Flour / Maida 3 Cups (420 Grams) + Some for dusting
  2. Lukewarm Water 1 Cup(236 ml)
  3. Olive Oil 3 Tablespoons
  4. Brown or white sugar 2 Tablespoons
  5. Active Dry Yeast 2 Teaspoons
  6. Salt 1 1/2 Teaspoon
  7. Egg White(Optional) 1

Instructions

  1. Grease the baking tray with oil and dust it with flour. Keep aside.
  2. Mix 1/4 Cup warm water , Yeast and 1/4th Teaspoon sugar and keep till it bubbles up. It will take 5 mins.
  3. In the remaining water, add oil and salt . Pour bubbled yeast in the flour and start adding the water with 2 tablespoons oil and salt in the flour little at a time till you get nice dough.
  4. Knead this dough for at least 10-12 minutes.
  5. Wrap with wet cloth and keep in the warm place for 2 hours for it to rise.
  6. After 2 hours, remove the cloth, you will see it nicely doubled in volume.
  7. Again knead it for 2 more minutes, dusting it with some dry flour.
  8. Flatten the dough using rolling pin or hands to form a rectangular shape.
  9. Divide it into 12 equal size balls.
  10. Grease baking tray using a tablespoon of oil.
  11. Place each ball on the tray, leaving about 1 inch distance between each.
  12. Cover and keep on warm spot for 2 more hours.
  13. After 2 hours, they will nicely rise again forming bigger balls and stick to each other.
  14. Brush these balls with egg white. This is optional. Egg whites gives it nice glaze once baked.
  15. Preheat the oven to 450 degree Fahrenheit and bake for 15 minutes.
  16. Once done, immediately transfer them on a wire rack for cooling. They will feel hard when removed out from oven but will eventually soften up once cooled down.
  17. Once these rolls are cooled down , they become nice crusty from outside and soft when you press them.
  18. Enjoy with any vegetarian or non vegetarian dish.
