Ingredients Serving: 8

  1. All purpose flour 3 cups
  2. Semolina 1/4th cup
  3. Salt 1 tsp
  4. Sugar 1 tsp
  5. Baking powder 1+1/2 tsp
  6. oil 2 tbsp
  7. Milk 1 cup
  8. Curd 2 tbsp
  9. Baking soda 1/4th tsp
  10. Water as needed
  11. For stuffing
  12. Boiled potatoes 2
  13. onion 1 big
  14. Green chillies 2
  15. Green coriander 2 tbsp
  16. Salt 1 tsp
  17. Red chilli powder 1/2 tsp
  18. Garam masala 1/2 tsp
  19. Chat masala 3/4th tsp
  20. Clarified butter to top kulchas

Instructions

  1. Mix together curd and baking soda and leave to ferment for 2 minutes.
  2. Meanwhile mix together all purpose flour, semolina, salt, sugar, baking powder well.
  3. Add oil and curd mixture to flour. Mix well.
  4. Add luke warm milk and mix well.
  5. Knead into a soft dough using water.
  6. Cover with damp cloth and leave for an hour at a warm place.
  7. Meanwhile prepare stuffing. Chop onions finely and grate boiled potatoes.
  8. Mix well chopped onions, grated boiled potatoes,chopped green coriander, chopped green chillies, salt, red chilli powder, chat masala, garam masala.
  9. Now divide dough and stuffing into 8 equal parts.
  10. Take a portion of dough roll into small disc. Place a portion of stuffing in center and seal the edges to form a ball.
  11. Roll again into 5 inches disc. Tap with wet fingers at top and spread some kasuri methi.
  12. Roll all kulchas same way and give a rest of 15 minutes.
  13. Heat a non stick pan. When medium hot set the flame to low.
  14. Flip one rolled kulcha on pan and cover with a lid.
  15. Let it cook for 2 minutes and flip.
  16. Cover and cook for 1 minute
  17. When nice golden brown from both sides top with butter and serve hot.
