ABOUT Chocolate Salami RECIPE

Chocolate salami is a traditional Italian dessert. It is called Salame al Cioccolato , is common on Christmas cookie platters and is an upscale , slightly whimsical version of the refrigerator biscuit cake. They are formed into sausage shapes , dusted with icing sugar and sliced- hence the “salami”. They are even tied with string to increase the likeness to the meat! This salami is easy and delicious !

Ingredients Serving: 20

  1. 112 grams or 1/2 cups unsalted butter
  2. 75 grams or 6 tablespoons granulated sugar
  3. 6 tbsps cocoa
  4. 60 ml or 1/4 cup milk
  5. 10 - 12 digestive biscuits
  6. 1/4 cup shelled and chopped pistachios
  7. 1/4 cup dried cranberries
  8. 1 tsp vanilla extract

Instructions

  1. Crush your biscuits roughly into small pieces by hand or food processor.
  2. Add the pistachios and cranberries and mix well. Keep aside.
  3. In a saucepan, melt the butter .
  4. Add the sugar and whisk until it melts.
  5. Add the cocoa and heat while mixing until smooth.
  6. Add the milk and stir until smooth.
  7. Pour this chocolate mixture over the biscuits, cranberries and pistachios, and mix well.
  8. Divide the mixture into two halves and place each on cling wrap.
  9. Roll each into a log using the cling wrap. Flatten the sides (round ends)
  10. Wrap in cling wrap and chill for 3 -4 hours
  11. Unwrap , dust with cocoa or icing sugar and slice !
