ABOUT Buttery Garlic Dinner Rolls RECIPE

These dinner rolls were melt-in-mouth and they disappeared in no time. Soft and fluffy from the insides and the perfect texture on the outside. Using ghee was another good idea as it makes these rolls a bit more healthier without compromising on the taste.

Ingredients Serving: 4

  1. 3 cups all purpose flour (maida) or bread flour
  2. 1-1/2 teaspoon instant or rapid rise yeast
  3. 1-1/2 teaspoon salt
  4. 2 teaspoon fine granulated sugar
  5. 1 cup + 2 tablespoon warm water
  6. 3 tablespoon ghee melted
  7. Olive oil to grease
  8. For butter garlic spread--
  9. 2 tablespoon finely minced garlic
  10. 4 tablespoon ghee melted
  11. 2 tablespoon finely chopped coriander leaves (or 1 teaspoon dried parsley)

Instructions

  1. In a large bowl, combine 1 cup flour, yeast, sugar, and salt. Stir thoroughly with rubber (or wooden/silicon) spatula.
  2. Combine water and butter and add it to the flour. Stir well with the flour for a minute.
  3. Gradually add 1/2 cup flour at a time and mix with spatula till all flour is used up.
  4. Now knead the dough with hands for 2-3 minutes on a clean kitchen surface dusted with flour. The dough should be soft, sticky, and pliable. Do not be tempted to add more flour.
  5. Cover the dough with greased cling film in the same bowl and keep aside for 10 minutes.
  6. Once again knead the dough for at least 10 minutes till smooth and soft. Place the dough in a greased bowl and cover with greased cling film.
  7. Keep the dough in a warm place until doubled in size (about 1-1/2 hours).
  8. Punch the dough lightly and gather it to form a round shape.
  9. Divide the dough in 12 (or 16) equal sized balls. Gather all the edges and pinch them together. Roll the ball with your palm to seal the seam gathered together.
  10. Shape accordingly i.e. round for buns or oblong and thinner for breadsticks. Place them on a baking tray lined with ovenproof parchment sheet with an inch gap between them.
  11. Cover the rolls with greased cling film and set aside for 45 minutes to rise (second rise).
  12. Just before completion of 45 minutes, preheat oven at 375 degrees Farenhite (180 degrees Celcius) for 10 minutes.
  13. Keep an ovenproof bowl with boiling water ready. Place the tray in the center rack and the bowl with water on the bottom rack.
  14. Bake for 15 minutes or longer (oven temperatures vary so keep a watch on the rolls). Bake till top side becomes light golden in color.
  15. Remove from oven and cool for 5 minutes or longer.
  16. Mix all ingredients mentioned under butter garlic spread well and brush over the warm rolls. Place the rolls back in the warm oven for a glazy appearance for 2 minutes. Best served when warm.
