This is my mother's yummy recipe.

Ingredients Serving: 8

  1. Grated bottle gourd 1 cup
  2. Ghee 1 tbs
  3. Cardamom powder 1/2 tsp
  4. Milk 3 cups
  5. Kesar / saffron 1/2 tsp
  6. Rose water 1 tsp
  7. Sugar 4 tbs
  8. Cashew nuts ,raisins ,pistachios ,almond 10 nos each
  9. Rabdi 1/2 cup
  10. Condensed milk 2 tbs
  11. Sugar for caramelizing
  12. Gee for frying
  13. Bread slices 6 (cut sides )

Instructions

  1. To make halwa, heat milk in a non stick pan & cook till reduced around to cups.
  2. Heat ghee in another pan ,add bottle gourd and saute for 7 minutes.
  3. Add reduced milk and condensed milk in cook ,stirring constantly, till all the liquid has evaporated.
  4. Add sugar to taste and cardamom powder.
  5. Mix thoroughly .
  6. Add cashew nuts ,raisins ,pistachios mix well.
  7. Heat sufficient ghee in a kadai and deep fry the breads till golden brown and crisp.
  8. Drain on obsorbent paper and set aside.
  9. Heat milk in a non stick pan .
  10. Add rose water , sugar and saffron and cook till the sugar melts .
  11. Dip the fried breads in the milk mixture and transfer on a plate.
  12. To make garnish , heat sugar in a non stick pan.
  13. Lower the heat and cook till the sugar turns golden brown.
  14. Dip the tip of each almond and pull to get a string .
  15. Set a side on a silicone sheet.
  16. Place a bread on a serving plate and top with a portion of bottle gourd halwa and roll it .
  17. Garnish with rabdi and caramelized almond serve immediately.
  18. Lauki chum chum is ready.
