Ingredients Serving: 5

  1. lady's finger 500 gram ( wash and wipe with tissue papers)
  2. chopped onion 1( big)
  3. chopped tomatoes one( big)
  4. Chopped ginger 1 teaspoon
  5. Red chilli powder 1 teaspoon
  6. Turmeric powder half teaspoon
  7. Coriander powder 1 teaspoon
  8. Curd 3 tablespoons
  9. besan (Bengal gram flour) 1 tablespoon
  10. for pickle spices---- cumin 1 tea spoon
  11. Carom seeds 1 teaspoon
  12. fenugreek seeds one teaspoon
  13. black mustard 1 teaspoon
  14. fennel seeds 1 teaspoon
  15. Nigella seeds 1 teaspoon
  16. Dried red chilli 2
  17. Mustard Oil as required
  18. salt as per taste
  19. Coriander leaves for garnishing

Instructions

  1. first of all, dry roast all the pickle spices
  2. make it cool and grind it into a fine powder
  3. now cut the lady's finger into medium pieces
  4. now heat the oil in a wok and fry the lady's finger for 2 minutes in medium flame , sprinkle some salt on it (do not put the lid)
  5. keep aside
  6. again heat the wok with required amount of oil and add onions
  7. fry the onion till translucent, then add Ginger and fry for 1 minute
  8. now add tomatoes and salt to it
  9. when the tomato become soft, add coriander powder, turmeric powder, red chilli powder and 2 tablespoons of pickle masala and combine well
  10. Whisk the curd and the besan in a separate bowl
  11. add this mixture into the masala
  12. Cook the masala very well (till the oil come out in the surface)
  13. now add the fried lady's finger to it and combine well
  14. cover the lid and cook for 5 to 6 minute, add salt if required
  15. turn off the gas and Sprinkle some coriander leaves
  16. serve hot with Roti ,paratha or rice
