Oatmeal has become an inseparable part of my diet. From rotis to curries, cookies to cakes, savories to sweets or drinks to desserts, oatmeal finds a place everywhere on my daily menu. This oatmeal kulfi is just one example!

Ingredients Serving: 4

  1. 1 cup milk
  2. 2 tbsp milk powder/kulfi mix
  3. 2 tsp roasted oatmeal
  4. Sugar as per taste
  5. Cardamom powder for aroma
  6. 1/2 tsp rose essence
  7. Almonds, pistachios or nuts of your choice

Instructions

  1. Boil milk in a pan along with milk powder and cardamom on a low flame for 5-8 minutes.
  2. Mix 1 tsp of milk with roasted oatmeal and pour it into the boiling milk. Stir constantly so that the milk doesn't burn or stick to the bottom of the vessel.
  3. Add half of the chopped nuts to the boiling mixture. Turn off the flame and allow it to cool down.
  4. Add rose essence and run the entire mixture in a food processor. (I have not added sugar to my kulfi, since I like it less sweet. If you want it sweeter, add sugar to boiling milk.)
  5. Pour this mixture into ice cream moulds and let it freeze for 4-5 hours.
  6. Garnish with the remaining nuts. Enjoy this fiber-rich oatmeal kulfi at any time of the day!
