Yummy aromatic veg biryani.

Ingredients Serving: 4

  1. basmati rice 3 cups
  2. Whole garam masala
  3. Oil / ghee 3 spoon
  4. Thinly sliced onions 2
  5. Fried onions 1/2 cup
  6. ginger garlic paste 2 tbs
  7. Green chilli 3
  8. Mixed veggies ( potato cauliflower carrot beans peas and panner) All together 1 big cup
  9. curd 3/4 cup
  10. salt to taste
  11. Briyani masala 1 1/2 tsp
  12. turmeric powder 1/4 tsp
  13. Red chilli powder 1 1/2 tsp.
  14. Pudina and coriander leaves 1 cup
  15. Fried onions for topping.
  16. Safron strands few string soaked in warm milk
  17. cashew 10 broken into half.

Instructions

  1. Soak the basmati rice for 1/2 hr to 1 hour and keep aside.
  2. After one hour boil water add whole garam masala into it. If u don't like in ur rice. Make a knot in white masklin cloth and drop it in the water ..
  3. Once water come to boiling point add ur soaked and drained rice to it..
  4. Cook until 80 % done. Drained and keep a side. . Allow to cool.
  5. In a pan / sauce pot add oil or ghee.. Once melts add Shahi jeera once sputter add whole garam masala
  6. add thinly sliced onions saute until translucent add ginger garlic paste saute until raw smells off add slit green chilli and pudina coriander leaves mix well .
  7. Now add all the veggies mix well also tomato sprinkle some water close the lid cook for 5 to 7 mins. .
  8. Once veggies cook soft add all the spices one by one followed by curd.
  9. Mix well everything combined add salt and chk the seasoning Close the lid let masala cooks well. . And off the flame.
  10. Layering: Drop some ghee to the bottom of the pan or in which you going to cook briyani.
  11. Firstly add some gravy.. on top of it rice on top of it saffron milk
  12. can also use kesari color instead with water just sprinkle Some here and there on rice. ..
  13. and top of it fried onions and freshly chopped mint and coriander leaves.
  14. Again with veggies and rice and saffron milk and again fried onions
  15. Like wise complete with the left over. Note final layers must be rice. And close the lid .
  16. Dum: Keep tawa on medium flame .. and keep the pot on it.
  17. Close the lid tightly u can either Dum by using kitchen towel and tightly closed with one more vessels which is inverted to the briyani pot.
  18. Else we all know with flour dough closed tightly . Steamed not suppose to go out.
  19. Cook for 20 mins on medium and low flame. And off the flame.
  20. Here's your yummy hot dum veg briyani ready to be served with onion raita or any choice of ur gravy. . Yum yum yummyyyyy♡♡♡
