ABOUT Lemon Coriander Soup RECIPE

Ingredients Serving: 4

  1. 1/3 cup chopped coriander leaves
  2. 1 tbsp lemon juice
  3. 2 tsp finely chopped garlic
  4. 1/2 inch ginger finely chopped
  5. 1/4 cup spring onion finely chopped
  6. 1/4 cup finely chopped cabbage
  7. 1/4 cup finely chopped carrots
  8. 1 baby corn finely chopped
  9. 1 tsp lemon grass finely chopped
  10. 1 tsp black pepper powder
  11. Salt to taste
  12. 4 cups basic vegetable stock/water
  13. 2 tsp cornflour dissolved in 2 tbsp water
  14. Garnish for coriander leaves

Instructions

  1. In a sauce pan heat oil on a medium flame add ginger & garlic and saute for a couple of minutes.
  2. Add the onions and saute u til they turn transparent.
  3. Now add all vegetables and coriander leaves and saute on a medium flame for minutes.
  4. Add the vegetable stock, lemon juice, salt and cornflour water mixture.
  5. Mix well and Cook on a medium flame for 2 to 3 minutes.
  6. Add pepper powder and once come to boil turn off the flame.
  7. Garnish with coriander leaves and serve hot.
