ABOUT Ranga Aloor Pithe or Sweet Potato Dumpling RECIPE

It is a traditional Bengali Sweet made during Sankranti. I am using my grandmother's recipe.

Ingredients Serving: 4

  1. Ranga Aloo or sweet potato 200 gm
  2. Maida or all purpose flour 1/2 cup
  3. Grated coconut 2
  4. Jaggery 400 gms
  5. Mawa or Khoya kheer 300 gm
  6. Oil for frying
  7. Sugar 3 cups
  8. Water 3 cups

Instructions

  1. In a large saucepan boil sugar and water, until you get one string consistency, keep it aside.
  2. Now peel and boil the sweet potatoes, later mash them nicely, add maida to it and form a dough, cover and keep aside.
  3. In another pan boil the jaggery with 1/2 cup water, as the jaggery melts, add the mawa and grated coconut, mix well until thickens.
  4. Take small portions from dough, and press them on your hand, take sufficient amount of jaggery coconut mix, put it inside the sweet potato like you would do to Aloo tikki, press and close the sides so that the stuffing remains inside, give your desired shapes.
  5. After you have finished with all the dough, now fry each pithe in hot oil, take them out on paper tissue to soak the excess oil, then dunk them in the sugar syrup, as they soak syrup and increase in size, serve them with saffron and pista slices.
