Ingredients Serving: 10

  1. 1 cup Rice flour
  2. 1/3rd cup chickpea flour/besan
  3. oil to deep fry+2 tablespoon for the dough
  4. water as needed to knead
  5. 200 gram finely chopped coriander leaves
  6. salt to taste
  7. 1 tablespoon red chilli flakes
  8. 1 tablespoon roasted cumin seeds
  9. 1.5 teaspoon toasted white sesame seeds
  10. 1 teaspoon carom/ajwain seeds
  11. 1 teaspoon sauf/fennel seeds


  1. place the flours in a mixing bowl
  2. add all the dry seeds, salt and chilli flakes to the flour
  3. add the chopped coriander leaves and mix well
  4. then add the oil and mix with your palm
  5. use the required amount of water to knead a stiff dough
  6. keep the dough rested for 30 minutes,covered
  7. after 30 minutes,add enough oil in a wok to deep fry and let the oil heat up on Low heat
  8. meanwhile, divide the dough into equal portions
  9. grease the working flour and the rolling pin with oil
  10. roll each portion of the dough as thin as possible
  11. cut out circles using a cookie cutter for medium sized / small bottle cover for smaller sized mathris
  12. Deep fry each mathri until light brown
  13. allow the fried mathris to rest on a kitchen tissue to drain off excess oil and cook off
  14. store airtight post cooling
  15. enjoy crispy and tasty rice mathris as a snack!
