ABOUT Tomato Rice RECIPE

Tomato rice is an authentic and a tangy South Indian dish. Any leftover rice can be easily made use of to prepare this yummy one-pot meal. It is generally had as a snack / breakfast along with some pickles and papad. You can use some sambar powder to enhance the flavour. It is a very quick and an easy recipe, which is just perfect as a lunch box meal too. Few roasted peanuts / cashew nuts too can be added for some slight crunch. Ingredients Serving: 3

  1. 1-2 cups cooked rice
  2. 2-3 tomatoes, chopped
  3. 2 tbsp. oil
  4. 1 tsp. mustard seeds
  5. pinch of asafoetida
  6. 1 tsp. urad dal
  7. 1 tbsp. chana dal
  8. 1 onion, chopped
  9. 2-3 garlic cloves, chopped
  10. 1" ginger, chopped
  11. 2 fresh chilies, chopped
  12. 1 sprig curry leaves
  13. salt to taste
  14. 1/2 tsp. turmeric powder
  15. 1 tsp. sambar powder (opt)
  16. 1 tsp. coriander leaves, chopped

Instructions

  1. Heat oil & temper with mustard seeds. Saute for a few seconds. Add the asafoetida, urad dal & chana dal & saute till it changes colour. Then add onion, ginger, garlic, fresh chilies & curry leaves.
  2. Add the tomatoes and turmeric powder. Saute till it is mashed up. Add the rice, salt and sambar powder. Saute for 2-3 minutes.
  3. Serve, garnished with coriander leaves.
