Ingredients Serving: 4

  1. Carrots 1/2 kg
  2. Coconut 1/2
  3. Red chillies 2
  4. Mustard seeds 1 tsp
  5. Cumin seeds 1/2 tsp
  6. Urad dal 2 tsp
  7. Red chilli powder 1 tsp
  8. Turmeric 1/2 tsp
  9. Curry leaves few
  10. Asfotedia / hing a pinch
  11. Oil
  12. Salt to season

Instructions

  1. Wash, peel and cut carrot into small cubes
  2. Grate coconut and keep aside.
  3. Heat oil in a sauce pan. Add mustard seeds. Allow to splutter then add the cumin seeds, Urad dal and broken red chillies
  4. Add a pinch of hing and then the curry leaves. Tip in the carrot peices.
  5. Add spices and salt. Mix, cover and leave to cook till done. Mix once or twice in between.
  6. When completely cooked stir the grated coconut. Switch off gas and serve with rice and Rasam.
