ABOUT KASARA KAYA VEPUDU / BABY KARELA STIR FRY RECIPE

This is a recipe from Andhra Pradesh. Kasara Kayalu are tiny karelas which are available mostly around monsoon season. I have seen them only in Andhra Pradesh. which is very surprising. Usually in Andhra they add a lot of chilli powder to this stir fry but I have made it milder. You may add onions or skip them.This preparation goes well with thin jowar rotis.

Ingredients Serving: 4

  1. Kasara Kayalu . ... 250 gms
  2. Onion ........... 1 (sliced)
  3. Garlic ........... 3-4 cloves (crushed)
  4. Turmeric powder .. 1/4 tsp
  5. Coriander powder .. 1/2 tsp
  6. Chilli powder ......... 1/2 tsp (adjust as per your liking)
  7. Tamarind juice ... 1-2 tbsps
  8. Jaggery ... 1 tsp (crushed)
  9. Salt .......... to taste
  10. Oil ......... 2 tbsps
  11. Coriander leaves .. for garnishing
  12. (For tempering:)
  13. Mustard seeds .. 1 tsp
  14. Asafoetida ....... 1 pinch
  15. Curry leaves .... few

Instructions

  1. Wash the karelas and wipe them well.
  2. Snip off the two ends.
  3. In a griddle dry roast the karelas (no oil ) for 5-7 minutes turning them until they get roasted evenly. Remove them and set aside.
  4. Heat oil in a sauce pan and add the tempering ingredients.
  5. When they crackle, add the garlic, onion and saute for a minute. Tip in the roasted baby karelas
  6. Add salt and spice powders and stir well. Add the tamarind juice and jaggery. Mix well and simmer stirring occasionally.
  7. Garnish with coriander leaves and serve with jowar rotis or as a side dish with dal chawal/ sambar rice.
