A delicacy from western U.P.These are dumpling stuffed with dry fruits and served with tangy curd.

Ingredients Serving: 3

  1. For dumpling /gujias:
  2. Soaked urad dal 1cup.
  3. Soda bicarb 1pinch.
  4. Chopped cashewnuts 1table spoon .
  5. Raisins 10_12nos
  6. Oil for frying 200 ml.
  7. For curd sauce :
  8. Curd 1cup.
  9. Roasted cumin powder 1table spoon .red chilly powder 1tea spoon.
  10. Rock salt 1tea spoon.
  11. Sugar 1tea spoon.
  12. Imli chutny 2 table spoon.

Instructions

  1. Grind soaked urad dal finely.
  2. Mix soda bi carb and blend well to asmooth batter.if needed add some water and mix well .
  3. Heat iol in a wok
  4. Put some amount of batter into gujia mould ,put few dry fruits in between .
  5. Drop in oil gently and fry till light brown on medium flame.
  6. Take 1litre water in a bowl ,rinse fried gujias into it for5minutes.
  7. Meanwhile blend curd with sugar,salt ,cumin powder andred chilly powder.
  8. Take out gujias from water,press gently by palms.arrange in a plate.
  9. Pour the curd mixture overgujias along with imli chutney.garnish with cumin powder ad red chilly powder .
  10. Serve chilled.
