Ingredients Serving: 4

  1. mutton 500g
  2. ginger garlic paste 1 tbsp
  3. biryani masala 2 tablespoon
  4. red chilli powder 2 teaspoon
  5. yoghurt half a cup
  6. pepper powder half teaspoon
  7. grated fresh coconut 2 tbsp (optional)
  8. green chilli paste half teaspoon
  9. sliced onions 2
  10. dried sliced onions 1/4 cup
  11. chopped coriander leaves handful
  12. lemon juice 1 tbsp
  13. grl as required
  14. Basmati rice to cups
  15. whole garam masala as (star anise cardamom cloves and cinnamon) as required

Instructions

  1. boil the mutton with little bit of ginger garlic paste in a pressure cooker until it is boiled enough and soft enough.
  2. strain the mutton and keep aside, do not throw away the water that can be used later.
  3. Heat a wok with some ghee or oil.
  4. Now add one star anise, 2 cloves, 2 cardamom and one cinnamon in the oil
  5. now add the sliced onions and fry until Golden Brown.
  6. now add the ginger garlic paste and saute it. after that add the boiled mutton pieces and fry for a few seconds.
  7. Add the powdered masalas and the grated coconut. Saute and cook for a few minutes
  8. now add the yoghurt, lower the flame and cook until the Masala leaves oil with intermittent stirring.
  9. once the Masala leaves oil and the muttom is cooked remove it from the flame and keep aside.
  10. wash the Basmati rice and boil it along with the required amount of water and rest of the whole garam masala along with little salt and oil.
  11. once the rice is half cooked, remove it from the heat strain and do not throw away the water.
  12. now grease the biryani pot with little ghee and put the layer of Mutton in it. Sprinkle half of the fried onions on it.
  13. now add all the Basmati rice that is half cooked on the mutton layer.
  14. sprinkle the coriander leaves, lemon juice and rest of the sliced onions along with a tiny bit of turmeric powder or colour on it.
  15. now mix one tablespoon of ghee in about half cup of the mutton stock collected earlier or the rice water and sprinkle it all over the Basmati rice in the biryani pot.
  16. now close the lid seal the ends with dough and cook those on a low flame for 40 minutes
  17. Res this for 10 minutes open the lid Mix and serve hot.
